Super Duper Spinach Porridge

Got lots of spinach to spare.....so thought of cooking a Super Duper Spinach Porridge. Plus, it's a Monday. Everyone's back to school and work. Welcome RUSH TIME!! Cooking porridge may not be entirely fast but it can be simple and hassle free. A one dish meal is what we are looking for. Good for kids and great for adults

Now let's get started........

INGREDIENTS :-

Bunch of chinese spinach
1 1/2 cup Basmati rice (rice measurement cup is used)
5 cups of filteres water
250g minced pork
salt
pepper
1-2 tbsp soy sauce
1 tsp sesame oil


Separate spinach leaves from stalks. Only leaves are used, the stalks are discarded. So, you will need a fairly large bunch if you want the porridge more spinachy. Wash and rinse spinach leaves.


You may need to wash and rinse a few times to rid any dirt and chemicals. Better if you can get organic produce. Inspect the leaves as well.


After washing the rice. Place in a pot and fill with filtered water. The water can be more or less depending on the desired viscosity of the porridge. Bring it to boil.


While waiting for the porridge to boil, roughly chop the spinach.


Marinade the minced pork with salt, pepper and soy sauce. Form into meatballs.


Stir the boiling porridge to prevent the grains from sticking to the bottom of the pot.


When the rice grains are cooked, put in the pork balls. If the porridge is too dry and looked more like cooked rice, pour in more water and stir.


Cook the pork balls in the porridge for about 5 mins. Then, add in the spinach.


Continue boiling and stirring for another 1 - 2 mins. Add salt to taste and a dribble of sesame oil.
Cover the pot and let stand for 5 mins before serving.


VOILA! ..... Serve with your favourite condiments, soy sauce or
just enjoy it neat!

Valentine's Day

Already past Valentine's Day.....officially. But I will still put up this post. The first posting of my ROJAK-ROJAK Klang Valley blog. Valentine's Day 2013 seems a little different from the past years......may be a little quieter. I was at 1 Utama in the evening....crowd was ok but still no VALENTINE MOOD. I guess because everyone is still in the Chinese New Year mood. Even the malls were decorated with CNY stuff. Later on headed to Tropicana City Mall..... even lesser crowd. Wanted to watch a movie but there weren't any good ones.

Decided to head home and cook a VALENTINE MEAL for my loved ones ...... Carbonara Elbows! It was a knock-out. Sorry! Could not take the picture fast enough.......it was gone before I could capture it. Finally....late nite supper. Blueberry Cheese Muffin and Hazelnut Choc drink. A practical gift for your loved ones, right?! Anyway, it was gone.....AGAIN! Before I could snap a photo....But you know where to look for these late nite snacks...keep a look out for the green mermaid.

Time to tuck-in to SLUMBER-L-A-N-D...........zzzzzzzz
